I really must find my 240mm Symmar, as you've found it's great wide angle for a 10x8 camera, I only ever used mine for 5x4 copy work (commercial), and it's probably boxed away somewhere.
But now I shoot 10x8 it would be really useful . . . . .

Beware of shopping at Focus on Imaging, while most suppliers are perfectly reputable I've had problems twice buying at the show. Dunco enlargers aren't or rather weren't that common in the UK, but are well engineered and expensive. Firstcall sell them for well over £1000.

Kentmere production is moving to Mobberley, that means the coating plant which Ilford needs to manufacture Berge materials. The Ilford coating machinery is too large.

Light fall off is not a problem using 5x4 with the f6.8 90mm Grandagon, I've been using mine for 20 years with absolutely no problem. However my 65mm SA does have fall off on 5x4, but as I only use it very occasionally for B&W work it's easy to correct at the printing stage. If I could find a reason...
