Hello Andrew,
The fireplace was taken on Velvia 100. Desaturation does not add anything to the pic. Feel free to play with it in Photoshop, if you wish.
The outdoor shot used Velvia 100, an 81B and a ND grad (I think a ND0.9). V100 film stock does weird things in sunset colours, which are sometimes good, sometimes bad. But in this case, it's just a problem with my scanner - two problems in fact: (i) it is not set up to scan V100 (ii) my scanner bleaches any highlights, which I then need to fish out. The cloud in the tranny is a golden glow in the centre (correct in scan) and slightly warmer on the fringes (too saturated red in scan).
